Fried ice-cream with pastry cream

Ingredients
Ice cream
5 egg whites
flour
spiced biscuits, lady fingers,... (or any other biscuit of your choice)
strawberries, blackberries,... (or other red fruit by choice)
pastry cream

Ingredients pastry cream
6 dl milk
5 egg yolks
100 grams of  sugar
50 grams of corn starch

Preparation pastry cream
- Cook the milk
- Whisk up the egg yolks with the sugar
- Mix with the corn starch
- Pour the boiling milk on the egg mixture
- Leave this mixture cook for 1 minute while stirring
- Take the mixture from the cooker and set aside

Preparation
- Put the scoops of ice cream one day in advance in the freezer
- Crush the biscuits with a fork until you become a mixture to coat the scoops
- First, put the scoops in flour, then in the whisked egg white and finally, in the biscuit mixture
- Repeat this 3 times to avoid that the scoops will crack when they are deep-fried
- Deep-fry the ice scoops at 180°C for about 1 minute

Garnish
- Put a stripe of pastry cream at the bottom of the plate
- Garnish with red fruit
- Put the fried ice cream at the last moment on the plate
